Bastille 1789 is a French single malt from Maison Daucourt, bottled in a 75cl bottle. It is made from 100% malted barley from the north east of France and distilled twice in copper stills, using Charente spring water and a 120-year-old strain of yeast.
The whisky is aged in Limousin oak barrels that previously held Sauternes, Burgundy, sherry and a French spirit.
The nose is toasty, malty and ripe, with spiced pear, toffee, cinnamon, allspice and honeysuckle. The palate follows with spiced pear, ginger snap biscuits, vanilla wafers and chocolate-covered malted milk balls, ending in a medium-long, savoury finish.
