Benchmark Full Proof is a Kentucky straight bourbon from Buffalo Trace Distillery, bottled at 62.5% (125 proof) in a 750ml bottle. It is non-chill-filtered and made from the distillery's Mash Bill #1.
It is bottled at the same 125 proof at which the spirit went into the oak, with no proofing water added, rather than at whatever strength the barrel happens to reach.
The nose is brown sugar and dark cocoa with caramel, toasted oak and baking spice, then caraway and dried mint. The palate is full-bodied and warm, with toffee, vanilla bean, cinnamon, dried cherry and orange peel. The finish is long, with charred oak, spice, sweet corn and a faint return of chocolate.
