Bernheim Cask Strength C925 is a straight wheat whiskey made at the Heaven Hill Distillery in Bardstown, Kentucky. It is bottled at 59.2% ABV (118.4 proof) and is non-chill-filtered.
The mash bill is roughly 51% wheat, 37% corn and 12% malted barley, and this batch was aged for between 7 and 9 years in new charred oak in open-air rickhouses.
The nose offers butterscotch, freshly cut hay, light raspberry, a touch of agave and seasoned oak. The palate is rich, with a sweet wheat core, corn-driven vanilla and honeyed malt, followed by cinnamon and prune as the strength builds. The finish is long and assertive, with burnt cinnamon, oak tannin and a slight bitter edge.
