Bespoken Spirits Rye Whiskey (75cl, 50%)

Bespoken Spirits Rye Whiskey is an American rye in a 750ml bottle, bottled at 50% ABV and non-chill filtered. The spirit comes from MGP in Indiana and has a mash bill of 95% rye and 5% malt. Bespoken, founded in 2018 by Stu Aaron and Martin Janousek, replaces long warehouse ageing with its own ACTivation process. After a short initial rest of three months, the spirit goes into a reactor with toasted wood microstaves, where controlled temperature, pressure and churn bring out aroma, colour and flavour over a few days. It is bottled at the company's Treasure Island Distillery in San Francisco. The nose shows caramel, vanilla and spice, with caraway, celery and a mild smokiness. The palate has charred American oak and rounded sweetness, ending peppery.
