Billecart-Salmon Le Clos Saint-Hilaire Brut Millésime (75cl)

Le Clos Saint-Hilaire is a Brut Blanc de Noirs Champagne from Billecart-Salmon, made only from Pinot Noir and produced in an edition of 1000 bottles. The grapes come from a single walled parcel near the house, planted in 1964 and farmed biodynamically. The name honours the patron saint of the church in Mareuil-sur-Aÿ. A draught horse works the vineyard, which improves the porosity and biodiversity of the soil. Deep roots help produce smaller, more concentrated grapes. The nose is complex, with floral and fruit notes, butter and honey over a chalky, mineral base. The palate is rich and creamy, with fruity, savoury flavours and a fresh, persistent finish.
