Batch number 2 of Bimber's ex-Oloroso release, an English single malt distilled in 2016 and bottled on 28 August 2020 at 51.7% ABV in a 70cl bottle. It is non-chill-filtered, natural colour and limited to 920 bottles.
The spirit was first matured in fresh bourbon casks, then finished in former Oloroso sherry casks. Bimber is a London distillery, set up in 2015 by Dariusz Plazewski and Ewelina Chruszczyk.
The nose has raisins, dried berries, vanilla cream, malt bread, gingerbread, cinnamon and French crepes with a dash of lemon juice. The palate is silky, with crushed red berries, quince jelly, chocolate sauce, walnuts, banana bread, cinnamon, golden syrup, seared pineapple and fresh, sweet sherry.
