This is the first release from Bimber, a single malt made in London and bottled at 54.2% ABV in a 70cl bottle. Only 1,000 bottles were produced, each individually numbered and presented in a hand-crafted oak box made by on-site coopers.
Master Distiller Darius Plazewski chose Pedro Ximenez casks filled in 2016, retired from decades-old Jerez soleras.
It is described as light and fruit-forward, with subtle hints of sherry and dried fruits.
