Bimber's first single malt comes from the distillery in west London. It was matured for three years in just five Pedro Ximénez casks and bottled in 2019, at 54.2% in a 70cl bottle.
The nose brings autumn berries, blackcurrant jam and rich fruitcake. On the palate there are dark berries, ginger, cinnamon, dried fruits, orange and clove, all with a rich sherry character.
