A fresh, linear sparkling wine from the Blanquette de Limoux AOC, made by Pierre Candeval. It is pale straw in colour with a fine mousse, and shows light floral and citrus notes alongside green apple and white bread. The palate is lively, with good acidity keeping the wine lean and inviting, while the finish stays dry and clean. It suits aperitifs and lighter dishes such as seafood, grilled fish, salads and fresh cheeses, served well chilled at around 6-8 °C.
