Blue Ash Farm Honey Bourbon (75cl, 45%)

Blue Ash Farm Honey Bourbon is a four-year-old straight bourbon infused with wildflower honey, made by Premiere Distillery in Wisconsin's Pecatonica River Valley. It is bottled at 45% ABV in a 75cl bottle. The honey comes from hives on the distillery's own land. It is not cooked or otherwise altered before it goes in, and is only filtered to remove pollen and beeswax, so the bourbon keeps its full strength. On the nose there is raw wildflower honey over bourbon warmth, with hints of caramel and grain sweetness. The palate is honeyed, with oak and vanilla and a slight peppery note at the back. The finish is long, with honey and warm oak.
