A Valpolicella Ripasso from Bolla, showing a compact ruby colour. The bouquet recalls ripe red fruits, cherry and sour cherry, with subtle spicy notes and a light earthy depth. The palate is full yet smooth, supported by polished tannins and fresh sapidity that balances the softness; a wrapping warmth integrates the fruit and gives a clean finish. It pairs easily with ragù pasta, roast meats, stews, aged cheeses, savoury condiments, mushrooms and cured meats. Serve slightly cooler than room temperature; younger bottles may benefit from brief decanting to soften and harmonise the sip.
