A 2021 Barolo from Cavallotto with a clear profile of compact red fruit, rose petal and undergrowth, alongside sweet spices and a light hint of tobacco.
The palate is lively and taut, with vivid acidity supporting the drink and dense but polished tannins, plus a pleasant savouriness. It offers finesse and tension, remaining balanced and persistent without losing compactness.
It benefits from brief decanting and suits substantial pairings such as braised beef, roast beef, game and aged cheeses. Serve around 16-18 C.
