A Barolo from Cavallotto, showing garnet colour with amber reflections. The aroma centres on faded rose, dark cherry, light earthy notes and a discreet hint of spice. The palate is taut, supported by lively acidity and well-structured but compact tannins, with a savoury, scalable texture and full body. It suits substantial dishes such as braised meats, game or aged cheeses, and benefits from decanting before serving at around 16-18 C.
