The 12.1 is one of four Octomore bottlings in the twelfth edition, released in 2021. This one is bottled at 59.9% in a 70cl bottle, with a phenol level of 130.8 ppm.
The barley is 100% Concerto from the Scottish mainland, harvested in 2014 and distilled in 2015. It was matured for five years entirely in ex-American whiskey casks, then bottled on Islay without chill-filtration or colouring.
The nose combines citrus zest, earthy peat smoke, vanilla cake and malt sugar, ending on ash and honey. The palate is peppery and sweet with a syrupy texture, with honey, burning wood chips and apricot jam. The long finish brings salted caramel and floral notes of dog rose and primrose before intense peat smoke.
