This is a baijiu-style spirit from Buffalo Trace Distillery in Frankfort, Kentucky, bottled at 45% ABV in a 375ml bottle. It is the 24th release in the Experimental Collection and the only baijiu-style edition the distillery has issued.
It is made from sorghum and peas rather than a whiskey mash bill, and distilled in the manner of whiskey. The spirit was aged for 11 years in three new American oak casks, one uncharred, one charred and one toasted, then married together.
The nose is rich and savoury, with chocolate, dark cherries and stone fruit. The palate shows a confectioners' sugar sweetness from the sorghum and peas, leading to a sweet toffee finish.
