This is the official festival bottling of Bunnahabhain for Fèis Ìle 2023, an unpeated Islay single malt matured fully in Canasta sherry casks. It is bottled at 51.2% in a 700ml bottle, non-chill-filtered and of natural colour.
The casks come from Bodegas Williams & Humbert in Jerez. Canasta is a cream-style sherry made from roughly 75% Oloroso and 25% Pedro Ximénez. Master Distiller Brendan McCarron took his inspiration from the distillery's Warehouse 9 cask-tasting experience.
The nose offers caramelised fruits, honey-roasted nuts, cinnamon, clove and a hint of rancio. Maple syrup and vanilla lead the palate, with figs, pears and cocoa, before a long, sweet finish.
