Bushmills – 21 Year Old (40%)

This is Bushmills 21 Year Old, an Irish single malt made by marrying malts that matured for at least 19 years in hand-selected Oloroso sherry butts and bourbon barrels. It was then finished in Madeira casks for a further two years. That finishing period is unusually long, which allows the malt to mellow and pick up deeper notes of ripe fruit and dried raisins from the casks that held the fortified Portuguese wine. It is bottled at 40% abv in limited numbers, and each bottle is numbered.
