Bushmills – The Rare Casks 29 Year Old Pedro Ximenez Cask Finish Irish Whiskey Limited Release No. 2 (75cl, 53%)

This is a 29 year old Irish single malt from Bushmills, the second release in the Rare Casks series, bottled at 53% ABV in a 750ml bottle. The spirit was distilled on 6 April 1992 and spent 12 years in ex-bourbon barrels. In July 2004 it was re-casked into first-fill Pedro Ximenez sherry casks, where it stayed for a further 17 years before bottling in January 2022. The release is limited to 500 bottles. Bushmills' own notes describe cashews, hazelnuts and dates on the nose. The palate brings dried fruit, praline and orange peel, giving way to vanilla warmth, and the finish is buttery.
