Ca' del Baio Barbera d'Alba Paolina

A red wine from Ca' del Baio, named after Paola, the daughter who is an oenologist and now takes part in the winemaking with her father. The Barbera comes from the estate's vineyards in Treiso, planted in 1960 on south-east-facing slopes. After a slow, cool fermentation in steel tanks, the wine matures for eight months in large Slovenian oak barrels. It is very concentrated and benefits from a little aeration in a carafe before serving. The nose shows dark berries, spices, cardamom and gingerbread, while the palate develops plums, dark cherries and fresh almonds. It suits pork, veal, lamb, poultry and not too strong cheeses, and is also well suited to game. Serve in large glasses.
