Ca' del Bosco Vintage Collection Extra Brut 2021 Franciacorta DOCG

This is a Franciacorta Extra Brut from Ca' del Bosco, blended from 43 base wines of Chardonnay, Pinot Bianco and Pinot Nero. The grapes are picked by hand into small crates, and the base wines ferment in small oak barrels for about five months before the cuvée is assembled. Disgorgement takes place without oxygen, using a system devised and patented by the house. It is pale straw with golden tints and a fine, persistent mousse. The nose brings nuts, yeast, pastry and a little citrus. The palate is full-bodied and broad, with a savoury character that carries into the finish. It pairs well with seafood.
