Calumet Farm 10 Year Bourbon (75cl, 50%)

Calumet Farm 10 Year is a Kentucky straight bourbon aged for ten years and bottled at 50% without chill filtration, in a 750ml bottle. It comes from a single rack of barrels, chosen from a centre-cut position in the warehouse. The mashbill is 74% corn, 18% rye and 8% malted barley, and the bourbon is made by Western Spirits Beverage Company. The nose opens with oak and tannin, then vanilla and caramel, with baking spice and brown sugar emerging as it settles. The palate is caramel and toasted honey, then charred wood, leather and a thread of rye spice. The finish is long and oak-driven, with baking spice and dried tobacco.
