Calumet Farm 8 Year Old is a Kentucky straight bourbon bottled at 45% ABV in a 750ml bottle. It spends eight years in deeply charred (#4) new American oak, and the mash bill is 74% corn, 18% rye and 8% malted barley.
It is bottled in small batches drawn from fewer than 50 barrels, and each bottle carries its batch number on the label. The name comes from Calumet Farm in Lexington, founded in 1924, which raised eight Kentucky Derby winners.
The nose is rich aged oak, deep vanilla, toasted oak and caramel. On the palate, vanilla and fruit give way to soft white pepper and oak spice. The finish is balanced and lingering, with warming caramel and light, drying tannins.
