Caol Ila – 12 Year (75cl, 43%)

Caol Ila 12 Year is a moderately peated Islay single malt Scotch whisky, bottled at 43% in a 750ml bottle. The distillery stands near Port Askaig on the island's north-eastern coast. The malt is peated to about 35 parts per million and matured for 12 years in refill American oak casks. A higher spirit cut point is used in distillation to give a lighter new-make spirit with fruity and floral notes alongside the peat. The nose has gentle peat smoke, sea spray, lemon zest and green apple. The palate is medium-bodied and oily, with briny smoke, waxy citrus and dried herbs. The finish is long and warming, with pepper, soft ash and coastal freshness.
