Caol Ila 1989 is an 11 year old Islay single malt bottled by Signatory Vintage for its Millennium Edition. It comes in a 1.5L bottle at 43% ABV.
The whisky is described as a balance of smoke and sweetness, with vanilla, dried fruit and a maritime edge.
On the nose there are crisp apple, ripe pear, dried apricot and blackberry, with cinnamon, clove and aged oak. The palate is malty and sweet, with toffee, salted caramel and a touch of nutmeg, in a silky, almost oily texture. The finish is long, with charred oak and honeyed citrus.
