A single malt from Caol Ila on Islay, distilled in 2017 and aged for nine years. It was bottled by Signatory Vintage in its Un-Chillfiltered Collection at 46% abv.
The whisky matured in first-fill oak casks that previously held Rivesaltes, a naturally sweet wine from Roussillon, which adds a fruity side to the peaty, maritime character of the distillery.
The nose offers delicate smoke, lemon zest, honey and dried fruit, with a saline, winey touch. On the palate, peat meets citrus, raisins, blond caramel and gentle spice. The finish is lingering, smoky and lightly sweet, with dried fruit and sea spray.
