Castle & Key – Bourbon 6 Year Old (75cl, 50.5%)

This is a six-year-old Kentucky straight bourbon from Castle & Key, bottled at 50.5% in a 75cl bottle. The distillery stands on the grounds of the old Old Taylor Distillery in Frankfort. The mash bill is 73% white corn, 17% malted barley and 10% rye. The white corn comes from Walnut Grove Farms in southwestern Kentucky. Fermentation runs for six days, and the spirit goes into barrel at 107 proof. The nose brings graham cracker, butterscotch, honeysuckle and red apple. The palate has golden raisin and light citrus, then toffee, praline and building cinnamon. The finish carries cinnamon, toffee and candied orange peel.
