Castle & Key Restoration Rye is a Kentucky straight rye whisky from the distillery at Frankfort, bottled at around 53% ABV in a 750ml bottle. The strength varies by batch.
The mashbill is 63% rye, 20% malted barley and 17% yellow corn, aged for at least three years in new American oak barrels. Barrels are grouped into sensory pods that are blended to a quality standard rather than a fixed flavour profile, so no two batches taste exactly alike.
The nose has cinnamon roll, honeysuckle, cranberry and cedar. The palate is led by ginger snap and orange peel, with rosemary, mint and brown sugar. The finish is medium, with black tea, citrus zest, cinnamon and allspice, ending dry and slightly peppery.
