Cava de Oro Mezcal Artesanal Joven (75cl, 42%)

This is an artisanal joven mezcal from Oaxaca, Mexico, made from 100% Espadín agave. Mature agaves are cooked, crushed and fermented, using tahona milling and copper distillation. It is bottled at 42% and aims for balance rather than heavy smoke, with roasted agave at the centre, supported by citrus and herbs before pepper, earth and gentle smoke come through. The nose brings roasted agave, bright citrus, fresh herbs, earthy minerals, white pepper and gentle smoke. The palate has cooked agave, lime zest, subtle fruit, green herbs and black pepper over soft smoky undertones. The finish is clean and lingering, with sweet agave, mineral notes, herbs, pepper and delicate smoke.
