César Florido Moscatel Pasas Sherry

César Florido's Moscatel Pasas is a sweet sherry made entirely from Moscatel of Alexandria grapes, left to dry naturally close to the winery. After hand harvesting, the grapes are pressed and ferment spontaneously with indigenous yeasts until the sugars are partly used up. Fortification is with mistella, a blend of grape must and neutral spirit. The sherry then ages for 12 months in a solera, a short distance from the Atlantic. Mahogany in colour, it smells of Muscat grapes, raisins, dried figs and dried fruit, with withered flowers at the end. The palate is warm, dense and glycerous, with fresh acidity and light savouriness, and a long fruity finish.
