This is a VSOP Armagnac from Chabot, a family house based in Labastide d'Armagnac in Gascony. It is a blend of several eaux-de-vie, the youngest of which have spent more than five years in oak. Chabot uses Baco Blanc, Colombard, Folle Blanche and Ugni Blanc.
The wine is distilled once in copper stills and aged in oak casks in cellars with controlled temperature and humidity.
It is a good copper colour. The nose is intense, with ripe pale fruit such as apricot and pear, softened by toasted bread and coffee. The palate is soft and well structured, with toasted notes leading, and the finish is structured and lasting.
