Chapter 7 Secret Orkney 16 Year Old (70cl, 54%)

This is a 16 year old single malt from a distillery on Orkney, one of the most northerly in Scotland and operating since 1798. Chapter 7 bottled it in the Monologue range at 54% in a 70cl bottle. The whisky was distilled in June 2006 and matured in a bourbon hogshead until it was bottled in October 2022. It is natural colour and non-chill-filtered, and only 382 bottles were filled. The notes describe a nose of lemon juice, chalk, sea water, ashes and green apples. The palate is zesty and creamy with honey and a coastal edge, and the long finish brings salt, lemon, oysters and kippers.
