Charbay Brandy No. 89 (75cl, 46%)

Charbay Brandy No. 89 is a pot still brandy distilled during the winter of 1989. It was double-distilled in an Alambic Charentais pot still from a blend of 74% Pinot Noir and 26% Sauvignon Blanc. The brandy spent 24 years in new French oak from Limousin and Nevers. Twenty-two barrels were chosen for their toasty, caramel richness, and it is bottled at 46% rather than reduced to 40%, as the flavours were considered too well knitted to dilute. It opens with caramel and toasty vanilla, followed by pear, jasmine and touches of dark chocolate. The finish carries a little warmth and spice.
