Château de Pez 2020 Saint-Estèphe

Château de Pez 2020 is a Saint-Estèphe red wine from Bordeaux. It is made from Cabernet Sauvignon, Merlot, Petit Verdot and Cabernet Franc, harvested separately by parcel at optimal ripeness. Fermentation takes place in wooden Médoc vats and temperature-controlled conical steel tanks, followed by malolactic fermentation and 12 months in French 225-litre barriques, 35-50% new. The blend is chosen by the estate's tasting panel, with Cabernet Sauvignon normally 51-62%. It shows a deep, bright ruby colour, with aromas of iris, redcurrant, blackberry, liquorice and light tobacco, and a velvety palate with preserved berry notes. Tannins are firm in youth, with good structure and fruit concentration. Serve with spiced lamb, game or beef.
