This is the 2024 Floor Malted release in Chichibu's On the Way series, in a 70cl bottle. Chichibu is a distillery in Saitama prefecture, Japan, founded in 2008 by Ichiro Akuto.
The focus here is floor malting, where barley is spread on the malting floor and turned by hand. The whisky is a blend of casks that held bourbon, sherry, Mizunara wine and Chibidaru, with an average age between 9 and 15 years.
The nose is balanced, with fresh cereal, shortbread and toast, then apple, pear and vanilla. The palate is silky, with malty sweetness, dried apricot, plum, cinnamon and nutmeg. The finish is of medium length and elegant.
