Island Rooster is a Kentucky straight rye from Chicken Cock, made from 95% rye and 5% malted barley and bottled at 47.5%. It spent over four years in new charred American oak before a finish of at least six months in Caribbean rum casks.
Only 25 barrels were selected for this limited edition, and it is bottled non-chill-filtered.
The nose combines rye spice, mint, honey and baking spices with vanilla, sweet rum and a hint of pineapple. On the palate come brown sugar, baked rye grain, nutmeg and gentle molasses. The finish turns to charred oak and rye spice, with a light, lingering sweetness.
