Choya Junmai Sake (75cl)

A junmai sake from Choya in Japan, made only from rice, water, yeast and koji, with no added alcohol or sugar. It is presented in a 75cl bottle. It is clear and crystalline in the glass, with a delicate nose of flowers and fruit and a hint of almond. The palate is silky, with acidity and sweetness in balance, and flavours of cooked rice and white flowers over a subtle mineral note. The finish is clean and lingering. It can be served lightly warmed or at room temperature, and goes well with sushi, sashimi and tempura.
