This is an XO Calvados from the Pays d'Auge, made by Christian Drouin. It is aged for several years in small oak casks, some of which previously held wine, sherry or cognac, which adds richness and complexity.
The nose offers baked apples, vanilla, toasted nuts and delicate spice with a woody touch. The palate is velvety, combining fruity sweetness with subtle wood notes. The finish is long, with dried fruit, caramel and gentle spice.
