Clonakilty – Single Pot Still Irish Whiskey Bajan Rum Cask Finish Cask Strength (56.8%)

Clonakilty Bajan Rum Finish is a limited single cask single pot still Irish whiskey from the Clonakilty Distillery in County Cork, bottled at a cask strength of 56.8%. It is made from 100% Irish barley, then finished in a cask that previously held Bajan rum from Barbados. The rum cask adds a sweet Caribbean note to the warming spice and buttery sweetness of the pot still style. The nose offers warm almonds with honey, rich toffee and poached pears. The palate is full and rich, with ginger biscuits, brown butter, demerara sugar and stewed apples. The finish is long, with bittersweet dark chocolate, cracked hazelnuts and fudge brownie.
