Cocchi Vermouth di Torino (75cl, 16%)

Cocchi Vermouth di Torino is a sweet, amber vermouth from Asti in Piedmont, bottled at 16% in a 75cl bottle. It revives the original 1891 recipe of Giulio Cocchi, which was brought back in 2011 by the Bava family, who have owned the house since 1978. It is built on an estate Moscato wine base, with cinchona bark as the lead botanical alongside wormwood, rhubarb, gentian, star anise, rose petals, bitter orange and juniper. Caramelised sugar gives the amber colour. The nose offers singed orange, candied citrus peel, vanilla, herbs, sour cherry and rose petal. The palate is full and thick, balancing bitter and sweet, with cherry, stewed raspberry, liquorice, cocoa and rhubarb. The finish is dark chocolate, citrus pith and lingering herbs.
