Cock of the Walk Proprietor's Reserve is a high-wheated Kentucky straight bourbon from Preservation Distillery in Bardstown, in a 750ml bottle. It comes from the distillery's Vintage Barrel Collection.
The whisky entered the barrel at a low 110 proof and spent six to eight years in heavily charred new American oak. It is blended in micro-batches of just one to three barrels and bottled unfiltered.
The nose brings dry tobacco, fresh butter and golden raisins. Buttery dessert notes open the palate, moving through apple crisp to a spike of Saigon cinnamon, and the finish is honey-spiced with a hint of cherries.
