This is a Demerara rum from Guyana, bottled by Compagnie des Indes. It spent 11 years in bourbon casks before a 36-month finish in an Armagnac cask, number GDA61, which yielded 479 bottles. It is bottled at 61.2% without added sugar or chill filtering.
The colour is old gold. The nose is fresher than the strength suggests, with lemon balm, chestnut cream, burnt sugar, dried flowers and mint.
The palate starts dry and powerful, then moves towards gingerbread, freshly baked bread, cardamom and roasted chestnuts.
