Contratto's Spumante Millesimato Pas Dosé Mathusalem is an expression of the Piedmont territory, made from Chardonnay grown on the hills of Canelli. This Metodo Classico has no added sugar in the dosage, leaving natural freshness and a lively structure. Long ageing on the lees, which can exceed 60 months, gives rare aromatic complexity with toasted bread, fresh almond and light mineral notes typical of the area's calcareous soil. On the palate it is elegant and fresh, with harmony between acidity and creaminess. It suits refined fish dishes such as tartare and shellfish, or meditative tasting. The Mathusalem format underlines its celebratory character.
