Corbin Cash Barrel Reserve Sweet Potato Liqueur (75cl, 35%)

This is a barrel-aged liqueur from Corbin Cash Distillery in Atwater, California, made on a base of sweet potato spirit from the Souza family farm. The sweet potatoes are estate grown and distilled at a lower proof, then aged up to four years in custom-charred American white oak. It is finished with brown sugar, cinnamon, nutmeg and star anise, with only 3% added sugar. The recipe was inspired by the founder's mother's sweet potato squares. The nose offers baked sweet potato, brown sugar and baking spice. The palate is rich and spiced without being heavy, with cinnamon, nutmeg and clove folding into vanilla and honeyed oak. The finish is long and gently rounded.
