Crémant de Bourgogne Blanc de Noirs Laurent Cognard & Co

A crémant from Burgundy made exclusively from Pinot Noir selected from the Cognard family's vineyards. It matures for at least 18 months on the lees in bottle before disgorgement. In the glass it is pale red and sparkling, with fine, persistent bubbles. The nose shows red fruits such as strawberry and cherry, with brioche and yeast notes. On the palate it is structured yet elegant, balancing fresh acidity with creaminess from the lees, with red fruit, light spice and minerality leading to a long, lively finish.
