This is a Brut Crémant de Bourgogne made from 60% Aligoté, 30% Pinot Noir and 10% Chardonnay.
The wine spends 18 months on its lees before disgorgement, twice the legal minimum of nine months. The dosage leaves residual sugar of 9 g/l.
It is light gold with a fine, persistent mousse. The nose offers pear and white peach with white flowers and honey. The palate is dry, fresh and full, with notes of brioche and toasted rye bread. It suits an aperitif, tapas, fish and shellfish.
