Crolly Distillery – Sessile Single Malt Irish Whiskey (70cl, 46%)

Sessile is a single malt Irish whiskey from Crolly Distillery in County Donegal, part of its Coillín Darach Oak Series. It is bottled at 46% in a 70cl bottle. The whiskey matures in ex-bourbon casks and is then finished in virgin oak, with the oak species chosen as the main influence on flavour. Here it is Quercus petraea, sessile oak. The distillery works in a restored 1902 stone building, using direct fired pot stills for double distillation. The colour is amber. The nose offers sweet vanilla, caramel, green apple, lemon sherbet and a hint of sweet almond. The palate is sweet, woody oak, and the finish brings crème brûlée, black pepper and soft tannin.
