Cynar is an Italian amaro named after the artichoke, Cynara scolymus, the plant that leads its recipe. It is made from an infusion of 13 herbs and plants, with artichoke leaf in front, and the recipe is unchanged.
Angelo Dalle Molle, a Venetian entrepreneur, created it and it was launched in 1952. It is now made by Campari Group. At 16.5% it is lighter than many amari, and it works before a meal as an aperitif or after one as a digestif.
It is dark brown and bittersweet, herbal and distinctly vegetal, with a rounded caramel smoothness. Serve it neat, over ice, with soda and a slice of citrus, or in place of Campari in a Negroni.
Tasting Notes
