Declaration Bourbon (75cl, 54%)

Declaration is a Kentucky straight bourbon, bottled at 54% in a 750ml bottle. It is released under the Bomberger's name from the Michter's distillery. The bourbon is aged in Chinquapin oak barrels, a more tannic cousin of standard American white oak, which are air-dried for over 36 months before being toasted and charred. The mashbill is thought to be 79% corn, 11% rye and 10% malted barley. The nose brings dark fruit, burnt sugar, roasted nuts and caramel. On the palate come toffee, salted chocolate, red berries and baking spices, followed by a long finish of dark chocolate, charred oak and lingering berry sweetness.
