Del Maguey Chichicapa Mezcal (70cl)

Del Maguey Chichicapa is a mezcal made in small batches in the village of Chichicapa, about seven hours south of Oaxaca. It is distilled from Espadín agave only. The agave is cooked for several days in underground pit ovens with hot wood and stones, which gives the smoky character. The juice is then naturally fermented and distilled in copper stills. The aromas run from smoky to gently sweet, with earth, spice and a subtle touch of citrus. It is best sipped neat at room temperature, and also suits cocktails that call for a deep flavour.
