Del Maguey San Pablo Ameyaltepec Mezcal (75cl)

This is a limited edition mezcal from Del Maguey, crafted by Aurelio Gonzalez Tobon in the village of Ameyaltepec in Puebla. The twelve to eighteen year old agave hearts are roasted in an earthen pit oven, fermented in the open air with ambient yeasts, then distilled once to proof in a resaque-style alembic still, passing through copper plates. It is a very floral mezcal, with spicy carnation and lilac alongside ripe, tropically sweet fruit and crisp citrus. The mouthfeel is creamy, round and soft, and it finishes with finesse, complexity and a note of minerality.
